Creating a batch file to backup files

Over the past week or so, certain files of mine have gotten corrupted, forcing me to manually backup. I backed up the files in a series of folders like so (using this moment as the backup time): "backups\8-16-15_1-44a". Now, what I would like to be able to do, is create a batch folder where I can run it, and it will copy the file, create a new folder, named "date_time", and paste the files inside.

If not possible, or it's insanely complicated, it's not the end of the world if I have to continue manually copying the files
