I just installed opera mini in my nokia 1680 and has installed with a language l do not understand, urgently assist me to change the language.

I suggest you uninstall it then redownload from this Kioskea site:

https://ccm.net/downloads/internet/5541-opera-mini/

Make sure you choose the correct installation language if asked.
