Hello,
For the Skype timestamps, make sure your timezone and time are both correct in Windows. Skype should only display time stamps based off that information. If your timezone or time was incorrect at the time the message came in on your device, then the older chat history may be permanently incorrect in your local history.
As for finding the profile, click on your profile picture, and this should take you to the profile menu and the settings.
