Problems uninstalling SP3

Hello,
I want to un install windows service pack 3 because it has messed up my email since I have put it on. When I go to add/remove programme list there are no options to remove the programme as there are with other applications. Can anyone help please? Also in system restore there is no restore point available for when I downloaded SP3 (my restore points only seem to go back one week and I installed SP3 8 days ago! - aaaaaargh!!!)
