Help me to transfer MKV with Spanish?

Hello,

Recently, I spare much time to learn Spanish. Now I download a multilingual video with MKV format. It's nice and valuable to transfer it to my (MP4 format) iPad. But how and what video converter shall I choose to do such a matter?
PS: I just want to convert the Spanish track of this video in MKV.
