Saving all emails into PDF

I have an employee no longer with us, we still access their emails for references. I want to deactivate and close their email address but want all the emails and attachments saved as PDF so that we can still easily search for information when needed.
How can I do this? without going one by one

Print them, one by one!

There are years of emails - unfortunately not a realistic solution

A pdf is printed. If you want them in PDF, it must be printed.

Now if you just want them offline, hook a mail client such as outlook into the account and download them.
