Hi,
Taking screenshots during calls should work as there's no option (yet) allowing to do so. However, in your case, I suppose that the chat in the background during your call is preventing screenshots because the "View once" option is enabled.
If you or your contact enabled "View once" on their messages, WhatsApp will block automatically any screenshot attempt. The same applies for statuses set to "My contacts except..." or "Only share with..."
Make sure the options I mentioned aren't enabled and try with other contacts to see if you notice the same behavior.
