On most phones (possibly all) you are out of luck if you store your data on the sim card, but maybe there are some possibility.
If that data was on a memory card, you could try to find if there is any data recovery tools to recover the data using PC while the memory card is attached to a reader. but rememer do not put any data on memory card any more before you have find back your data. anyway, have a try.
