i bought a chinese handset it looks like nokia 5800, how could i change the phone's complete software into an original i-phone or original nokia 5800

You can't. Period. You bought a knock-off and it will always be a knock-off.

Besides, other than defrauding someone else to whom you would sell the phone, what reason could you have for pirating an iPhone's software?
