You can never uninstall an operating system.
You need to perform a fresh installation by configuring your BIOS to boot from CD ROM as 1st option,
save changes & exit: Type Y for YES.
Your system will restart and insert the WIN XP Installation Disk. Now it will tell you :
Press any key to boot from CD.....
Press any key and follow the instructions, you need to format the hard drive partition because you won't be able to use the Server 2003 operating system.
