This question really isn't answerable in it's current form. How many processes can run without lagging depends on what the processes are doing, which version of the Mac OS you have, what processes are running in the background, how much RAM you have, and the processor specs. Right now, there are currently 77 processes running on my 2 year old MacBook (1 GB RAM, 2.0 GHz processor, OS 10.5.6 Leopard) with no lag, but most of those are in the background.

A better question would probably be to compare benchmark tests against some base that you are familiar with and a Mac that you might consider buying.

XBench does a lot of Mac benchmarking and might be a good jumping off point for you to find the answers you're really looking for.
