I'm going to answer it the way I have interpreted your question first.
You should be able to go into settings on the display of the printer, or on the software package that came with the printer, and change it so that it defaults to black and thus color shouldn't be necessary to function.
Not sure, as I've never attempted to run a printer without all cartridges, but it should work in theory.
Now if you are asking if a black only cartridge will print in ONLY black, then the answer is yes. No colors will come of only black, except black itself.
