Hello, it would seem that your iPad is too old to download iPad OS 14. After a certain amount of time older devices are no longer supported in the most recent OS updates.
If you update your iPad, it shouldn't automatically update to the latest possible version of OS for your device.
This is the compatibility list:
If your iPad is not in this list, then you cannot updated to the latest OS.
