iTunes cannot transfer your iPod material to your computer. It's a one-way sync program.
A while back, my hard-drive kicked the bucket and I lost all my music and movies. Fortunately I still had them on my iPhone 3G.
So I used a small tool "CopyTrans" to copy all my songs, videos and podcasts off to iTunes.

I can tell it worked seamlessly. Now I am still using Copytrans on a daily basis to transfer my iPhone music to my home and office computers.
