Headphone option goes away

Hello,
As soon as I plug in my headphones, the option to select headphones goes away. what do I do?

Are these USB, or MINIDIN? Did they ever work? What make and model? What Operating system? Whole bunch of details missing to try to solve, please help us help you!!!!
