If someone has deleted my phone number from their cell phone contacts will their NAME still appear in my WhatsApp contact list?
Or just their phone number?

Hello, and happy new year!
If someone deletes you from their contact list, you can't see their profile (Profile picture / Status message/ Last seen) if they have set their visibility to 'My Contacts' in their phone settings.
Their name and number will still appear on your phone if they are still in your contacts.
