A few days ago my phone was stolen with my sim card.
I don't think my phone got hacked into, but I need to know wether you can access my whatsapp backup history without my email address (meaning someone put the sim into a different phone)

Hello, if they physically have access to your phone are able to unlock it, then yes, they could access your WhatsApp messages, and ultimately your backup.
