Hi,
The only way to restore your deleted discussion is to restore your last backup that contains it, prior deletion. You need to uninstall and reinstall WhatsApp, then you'll be invited to restore your backup from Google Drive or iCloud.
If you've a local WhatsApp backup (Android only), here's how to restore it.
However, before restoring your backup, please note that any recent data that has been created after the backup will be lost.
