Hello, if you want to change your phone number attached your Gmail account, log into your Gmail account > go to settings > contact details > and then change your number.
However if you are unable to get into your Gmail account, and you have changed your phone number since you created your account, you can follow the steps in this article on how to recover your gmail account.

Go to the gear option in your Gmail account, and then select settings option. There you need to click on the Accounts and Import tab. You will find the option to change your recovery phone number.

You can easily change your mobile number by sign in your account, going to setting and selecting personal info and there you can update your phone number in your gmail account.
