Indeed, the option "Don't show headers in message list" is available in Outlook, not in Yahoo. However, as a workaround, you can link your Yahoo account to Outlook to enjoy this option.
In Outlook, go to Settings > View all Outlook settings > Mail > Sync email. From there, select the option to add an email account and log in to your Yahoo Mail account.
Once your Yahoo account is linked, your messages will no longer be sorted by date. However, you must log in from Outlook. If you go back to Yahoo, your messages will continue to be sorted by date as the option doesn't exist for Yahoo.

To stop Yahoo from grouping messages by date, follow these steps:
Log into your Yahoo Mail account. On the top-right corner, click on "Settings," followed by "More Settings," from the drop-down menu, before finally selecting "Viewing emails."
Within Yahoo Mail's "Conversationss" section, simply switch off "Enable conversations." Once done, scroll down and click on "Save." By disabling conversation view in Yahoo Mail, your messages won't be organized chronologically; they will instead appear individually within your inbox.
Mine was already off/disabled, so, I turned it on/enabled, and checked the e-mails, but, saw no difference. So, I turned it back off/disabled, but, they were still grouped. I looked through all the settings, and couldn't find anything relevant. If the "basic/old/classic" Yahoo Mail didn't have trouble attaching files, I wouldn't use the "new" one. I find the group-by-date without a way to shut it off to be very annoying.

The option you're displaying doesn't appear in my Yahoo mail settings anywhere.

Thunderbird mail app also can sync to Yahoo and it removes the date separators.
I've used T-Bird for years. It's UI screen is uncluttered -- not like Yahoo and Gmail. Looks more like the old Windows Explorer.
