Uefi vs legacy

Dear All,
In my Laptop BIOS, I saw Boot Option has two Choose, "UEFI and LEGACY"
I wonder, what are they?
When i tried to get into BIOS and Change BOOT Mode to "UEFI"
My computer won't boot and BIOS message alert
"Default Boot Device missiong or Boot failed.
But when i change Boot Mode in BIOS to LEGACY
I can boot Windows As normally.
Could you explain me what is UEFI and LEGACY?
What they are using for?

Legacy is usually another word for Proprietary. The reason why it would work, is because a propriatary anything does not have to adhere to any standards.
