I uninstalled Explorer 8 using the "Add or Remove Programs" option that you can find in "Control Panel". When you remove IE8 it will reinstall IE7 automatically. Good Luck
use add/remove from control panel like xpcman explained. it DOES work. I did this on ALL of my Vista and XP computers. I HATE ie8!
good luck

Yes I did.
Maybe you'll have to uninstall the upgrades first from add/remove programs. After doing that, if you don't see the uninstall button, go to windows/IE8 and inside you'll find the folder named spuninst, execute the file spuninst.exe. This file will uninstall IE8.
According to Microsoft if you uninstall IE8 there will still be some parts of it left to work with Windows. It will not completely uninstall, so in order to view web pages you will need a third party browser like Mozilla.
See the Microsoft article.

Didnt work for me... I also tried MS alternative solution which is pasting FORFILES /P %WINDIR%\servicing\Packages /M Microsoft-Windows-InternetExplorer-8*.mum /c "cmd /c echo Uninstalling package @fname && start /w pkgmgr /up:@fname /norestart" into the command prompt... got the blue screen after that one... still looking for another answer.
The problem is that you have already deleted some files causing an "incomplete" removal of I.E.8.0 I to have downgraded because I have thousands of dollars worth of recording programs that are incompatable with I.E. 8.0. I did what the others had mentioned and it worked just fine. I recommend getting on I.E. webpage and re-downloading I.E. 8.0 so that way all the files are there then follow the process that was mentioned earlier. Odds are you accidently deleted a file that is neccissary for both I.E. 7 and 8.0. I am close to positive that doing this will fix your problem. Let me know how it goes, good luck!
The problem might be is the same as mine I did download IE8 an dunistalled it like you said and IE7 comes back just fine, But now I upgrades to windows 7 and now I can not get IE 7 to download or remove IE 8..
If anyone has ideas I would love to hear from you?
The problem is I love windows 7 so far but it will not work with my companys intaranet web site for some reason and they are working on a fix for this but in the mean time I have to drive into work to work on an old computer?
One option I guess is to buy an old xp computer?
I have already tried about 8 different browsers and have not yet found one that works yet?
Thanks for any help

After selecting it you will need to scroll down to find "Windows Internet Explorer 8"
