I have never heard of mails with or without labels. Explain

In Gmail we use labels to categorise emails before archiving them. Some emails stay without label. If you have lots of emails it is easy to search for any label but not the opposite. I need to find in "All Mail" any email that was not labelled yet ! Or maybe omit all the labelled ones.
