To disable WMC, click on Start, Control Panel, Programs and Features. On the left-hand side of the window should be "Turn features on or off". Click on it, and in the list, find and click on the "plus" sign next to Media Features to expand all of the listed features. Uncheck Windows Media Center, and then click on OK. This will not uninstall WMC so that it can be turned back on just in case you might want it one day, but you won't have the problem of WMC opening any more.
As a warning, though, turning off or uninstalling WMC may cause future updates to fail from installing because the removal of WMC also removes the RunOnce registry key.
