Hello,

If you sync your ipod to itunes and you click erase and sync, does your all music and apps go away? And how do you save your music?

Yes if you sync then the ipod is erased and ends-up with what is on the computer. You can buy a program (not from Apple) that will copy the music from the ipod to the computer. Google "ipod sync" to find such programs.
