Hello,
Regards.
- Update your device to the latest OS - This should help resolve any little bugs.
- Check that you haven't muted your microphone.
- Check your Wi-Fi or mobile data connection - poor connection can give bad audio quality.
- Is the microphone "busy"? - your microphone may be being used by another app at the same time. Try ending all other possible sources before using FaceTime.
- Check that your microphone is working properly - if it works for other calls, it shouldn't be a problem.
Regards.

Also, sometimes if you have the do not disturb switch (on the left side of your iPhone) switched on, this can effect audio.
It is also possible that if you are holding your phone whilst calling you are blocking the microphone and making your voice harder to here.
Go into your settings and check which apps are running. If there are apps that you typically use your microphone with, make sure they're switched off.
